Turmeric Tuna Burgers

A friend recently asked me to share a recipe with turmeric. For whatever reason turmeric tuna burgers popped into my head. I haven't eaten a tuna burgers in years so not sure why it occured to me but glad it did. These are super tasty! Tuna burgers aside, if you are looking to add turmeric in your diet you can literally add them to everything; smoothies, salads, oatmeal, etc etc. I personally love turmeric in smoothies.


Tuna burgers are very high in protein so make an ideal, blood sugar balancing and satisfying lunch or dinner. Add turmeric for an anti-inflammatory touch. I've also made them gluten-free using gluten-free bread crumbs. For a low-carb version omit the bread crumbs and replace with almond flour. I used half and half for the fun of it.


INGREDIENTS


2 cans tuna

2 eggs

2 slices gluten-free bread, lightly toasted and hardened

1/4 almond flour

2 cloves garlic, minced

1/2 small onion, finely chopped

small handful parsley

thumb-size piece of turmeric

1/2 teaspoon turmeric powder

1 teaspoon mustard

squeeze lemon

1 tablespoon olive oil

salt to taste

ground pepper to taste



DIRECTIONS


1. In a bowl, place drained tuna, then onion, garlic, parsley, turmeric, salt, pepper. Add the turmeric, turmeric powder, lemon, olive oil, mustard. Mix again. Add the bread crumbs and almonds. Mix again. Add the eggs and mix.


2. Divide into four patties. You can chill them for an hour for a firmer consistency.


3. Use a couple tablespoons olive oil or avocado oil in a skillet on medium-high heat. Cook around 4-5 minutes per side. Turn down heat if needed. They should be nice and browned. Enjoy!
